What is Kombucha?

Kombucha is raw, fermented tea. It starts with organic tea and sugar which is combined with a SCOBY (symbiotic culture of bacteria and yeast), also called a “mother”. It sits for a time during which the sugar and caffeine are metabolized by the culture into beneficial bacteria and yeast. Organic herbs, berries, fruits and flowers are then added to the base goodness for flavor.

The result is a healthy, delicious, naturally effervescent beverage.

Kombucha is high in probiotics and is comprised of antioxidants, enzymes, amino acids and B vitamins. It is known for detoxifying, energizing, alkalizing and enhancing the immune system.  

What is "Olinka"?

There is a litany of names for the beverage and a longer list of cross-cultural names for the SCOBY or culture. 'Olinka' is a Moravian~Bohemian monastic term used by the monks to designate the mother culture. 

Olinka Kombucha is handmade in Sedona, Arizona in small glass jars.

Our kombucha kitchen is certified by the Yavapai County Health Department.
